Garlic-Chive-Shrimp-fried Rice with Garlic Chips

Ingredients

Directions

Prepare

  1. Heat the oil in a frying pan over medium high heat and add the garlic. Fry the garlic slices until golden brown then transfer to a paper towel lined plate.

  2. Fry the shrimp in the garlic flavoured oil until it’s barely cooked (just turns pink) then transfer to a plate.

Fry the rice

  1. Make sure there’s still enough oil left in the pan, then add the cooked rice and fry using a pressing motion (not a cutting motion) with a spatula to break up any clumps. Add the garlic chives, lime leaves, sansho, and pepper and continue to stir-fry until the herbs are fragrant.

  2. Add the shrimp back in and drizzle the fish sauce and mirin evenly over the rice and stir until the liquid has completely evaporated.

Plate and serve

  1. To plate the rice, press some rice into a ramekin or shallow bowl and invert onto a plate. Make an indentation in the middle of the rice with a spoon and break a slow cooked egg into it. Top with the garlic chips and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked rice
Forms the bulk of the dish and carries the flavours as it fries.
Shrimp
Provides the main protein; cooked only until just pink so it stays tender.
Slow cooked eggs
Adds richness and a creamy yolk that moistens the rice when broken in.
Fish sauce
Adds savoury depth and salt that seasons the rice as the liquid evaporates.
Garlic
Frying the slices in oil gives a golden, aromatic garlic oil and crisp chips.

The step that matters

Frying the shrimp until just pink. Shrimp keep cooking from residual heat and become rubbery if overcooked, so they should be removed as soon as they turn pink.
