What each ingredient does

Lima beans
Cook to a very soft puree that forms the body and bulk of the ravioli filling.
Onion
Caramelizing in oil adds sweetness and deep golden flavor to the filling.
Garlic
Adds pungent aroma that mellows during frying alongside the onions.
Egg
Egg wash acts as a glue, sealing the wrapper edges so the filling stays inside.
Pumpkin
Simmered and pureed to form the smooth, thin sauce served over the ravioli.

The step that matters

Sealing the wrappers. Wet edges must be pressed firmly with egg wash so no air or filling escapes; a weak seal lets the ravioli burst or leak while simmering in water.
