Why it works: Oregano and cumin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 983 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Baked Chicken with Bramley Apples and Orange Glaze
Serves 4Ingredients
Directions
Marinate
Heat the oven to 220°C, Gas Mark 7.
Using a rolling pin, crush the black peppercorns, then place them along with the spices, oregano and garlic into a bowl large enough to take the chicken breasts and mix well.
Add the orange juice, olive oil and honey and mix well.
Add the chicken, coat in the marinade and then leave for 10 minutes.
Bake and glaze
Drain the chicken and place it into a baking tray; bake in the pre-heated oven for 20-25 minutes. The chicken must be cooked and juicy, but not overcooked, dry and stringy.
Meanwhile, pour the marinade into a saucepan and cook over a gentle heat until thick and syrupy.
Add the apples just at the end to cook through, but not break up completely.
Cut each chicken breast into 3 and drizzle over the reduced glaze.
Serve
Serve with plain boiled rice or mashed potatoes with a few spring onions stirred through at the last moment.

What each ingredient does
- Chicken breasts
- Provide the main protein, which firms and cooks through in the oven.
- Orange juice
- Adds acidity and fruity sweetness, and reduces into the glaze.
- Honey
- Adds sweetness and helps the glaze turn thick, sticky and glossy.
- Olive oil
- Adds fat that carries the spices and helps flavour coat the chicken.
- Bramley apples
- Add tartness and a soft texture that contrasts with the rich glaze.
- Garlic
- Adds pungent aroma that mellows during cooking.
The step that matters
Bake the chicken until just cooked. Chicken turns dry and stringy when overcooked, because muscle proteins tighten and squeeze out moisture. Check that it is cooked through but still juicy.
