Baked Eggs with Sausage, Pepper and Potato Hash

Oven350°F (175°C)

Ingredients

Directions

Prepare the potatoes

  1. Combine potatoes with cold water in a saucepan, bring to a boil, simmer covered 25‑30 minutes until just tender. Drain, peel when cool, chill peeled potatoes loosely covered for 1 hour.

  2. Preheat oven to 350°F (175°C).

  3. Dice the chilled potatoes. Saute in a skillet with 1 tablespoon olive oil and 1 tablespoon butter over medium‑high heat for 5 minutes or until golden brown. Set aside.

Make the hash

  1. In a separate skillet with a non‑stick coating, saute the chorizo over medium‑high heat for 5 minutes or until golden brown. Transfer to a cutting board to cool. Pour off all but 2 tablespoons of fat, reduce heat to medium.

  2. Add the sliced onion to the skillet and cook, stirring, until softened. Add the sliced bell peppers and minced garlic; cook, stirring occasionally, until the onion is golden and peppers have wilted.

  3. Cut the cooled chorizo into ½‑inch thick slices and add to the skillet with the tomatoes. Cook, stirring, for 2 minutes.

  4. Add the wine, vinegar, oregano, and basil to the skillet. Cook, stirring, for 10 minutes or until excess liquid has evaporated but mixture remains moist.

  5. Gently stir in the sautéed potatoes. Season to taste with salt and pepper. Transfer the mixture to a 1½‑quart gratin dish, spreading evenly. Bring to room temperature and store chilled and covered, or continue with the recipe.

Bake and serve

  1. Bake the mixture in the oven for 10–20 minutes or until hot. Make six depressions in the hash. Carefully break one egg into each depression and bake an additional 15–20 minutes until the eggs are set.

  2. Serve. (Makes 6 servings)

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiling potatoes
Provide the starchy bulk of the hash, browning crisply in the fat.
Chorizo
Adds fat and smoky, spicy flavor that seasons the whole dish.
Onion
Softens and turns sweet as it cooks, building the base flavor.
Red bell peppers
Add sweetness and soft texture as they wilt into the mixture.
Eggs
Set in the hot hash during baking, giving a creamy, cooked topping.
Whole tomatoes
Add moisture and acidity that combine with the wine and vinegar.

The step that matters

Reduce the liquid until the mixture stays moist. Cooking off excess liquid keeps the hash from turning soggy in the oven, while leaving some moisture so the eggs cook gently in it.

Swap the clove

How well each one fits the dish's main ingredients (potato, olive, butter, pork, onion, pepper, garlic):

  1. Thymefits better
  2. Parsleyfits better
  3. Rosemaryfits better
  4. Clovethe original

Fit is the average pairing score against potato, olive, butter, pork, onion, pepper, garlic. Candidates are from the same food group and used in at least 100 recipes.
