What each ingredient does

Penne
Provides the sturdy pasta body that holds the creamy sauce and bacon.
Witte verse kaas
Melts into the base of the creamy sauce, giving it smoothness and body.
Geraspte gruyere kaas
Adds melting and savoury flavour to the cheese sauce.
Geraspte goudse jonge kaas
Adds melting and savoury flavour to the cheese sauce.
Spekdobbelsteentjes
Adds salty, smoky flavour and crisp texture when fried until crispy.
Champignons
Add earthy flavour and a meaty texture once fried dry.

The step that matters

Adding the hot pasta to the cold cheese sauce. The heat from the drained pasta is what melts the cheese into a smooth sauce. If the pasta cools too much or the cheese is not stirred well, the sauce can stay lumpy or clumpy instead of coating the noodles.
