What each ingredient does

Cube steak
Provides the meat that becomes tender during pressure cooking in the gravy.
Onion
Softens and sweetens as it cooks, adding savory depth to the gravy.
Garlic
Adds aromatic pungency that mellows and deepens as it is sauteed.
Brown/onion gravy mix
Thickens the cooking liquid and adds savory, onion-flavored body to the sauce.
White wine
Adds acidity that brightens the sauce and helps lift browned flavors from the pan.

The step that matters

Searing the steak in olive oil until browned on both sides. Browning creates flavorful Maillard compounds on the surface. Pale, unseared meat tastes flat, and the surface must be dry and the pan hot to brown rather than steam.
