What each ingredient does

Beef brisket or bottom round roast
Provides the main meat, which becomes tender through long moist cooking.
Brown sugar
Adds sweetness and helps darken the braising liquid and meat surface.
Red wine vinegar
Adds acidity that brightens the sauce and helps soften the meat fibres.
Onions
Break down during cooking, adding sweetness and body to the sauce.
Shortening
Carries heat for browning the meat, building colour and flavour on the surface.

The step that matters

Brown the meat well on all sides. Browning creates deep flavour through the Maillard reaction. Pale, unbrowned meat under pressure gives a flat-tasting sauce, so the surface needs real colour before liquid goes in.

Swap the onion
