What each ingredient does

Eggs
Set the custard structure as they cook, giving the pudding body and firmness.
Cornstarch
Thickens the custard so it holds its shape when chilled.
Butter
Adds richness and a smooth, tender mouthfeel.
Half and half
Supplies milk fat and liquid for a creamy, smooth custard.
Baking cocoa
Provides the chocolate flavor and deep color of the pudding.
Sugar
Sweetens the custard and softens its texture.

The step that matters

Release pressure before opening the cooker. Sudden pressure release can make the custard bubble up or crack its surface, and it may keep cooking unevenly. Letting pressure drop naturally keeps the custard smooth and set.

Swap the cocoa
