What each ingredient does

Tomato puree
Forms the main body and liquid of the sauce.
Tomato paste
Adds concentrated tomato flavor and thickens the sauce as it simmers.
Onion
Builds a sweet, savory base when browned in oil.
Hamburger or italian sausage
Adds meaty richness and fat that carries flavor through the sauce.
Wine
Adds acidity and depth of flavor to the sauce.

The step that matters

Simmer 3 to 5 hours. A long, gentle simmer lets the sauce thicken by evaporation and lets the flavors blend. Too short a simmer leaves it thin and sharp-tasting, so keep the heat low enough for a slow bubble.

Swap the onion

How well each one fits the dish's main ingredients (tomato, garlic, clove, oregano, basil, sugar, pepper):

  1. Eggplantfits better
  2. Capsicumfits better
  3. Carrotfits better

Fit is the average pairing score against tomato, garlic, clove, oregano, basil, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
