Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potato
Provides the thick, smooth body and mild sweetness of the fondue base.
Mascarpone cheese
Adds richness and a creamy, fat-driven texture that keeps the fondue smooth.
Crabmeat
Supplies the delicate seafood flavor and tender flakes that stand out in the creamy base.
Bacon
Renders fat that carries savory, smoky flavor into the onions.
Onion
Caramelizes to add sweetness and deep savory flavor to the base.

The step that matters

Caramelizing the onions. Onions need steady medium heat and time to brown; rushing leaves them pale and raw-tasting. Browning through the Maillard reaction and sugar caramelization builds the deep, sweet flavor that the fondue depends on.

Swap the clove

How well each one fits the dish's main ingredients (sweet potato, garlic, onion, cheese):

  1. Cuminfits better
  2. Thymefits better
  3. Corianderfits better
  4. Clovethe original

Fit is the average pairing score against sweet potato, garlic, onion, cheese. Candidates are from the same food group and used in at least 100 recipes.
