Why it works: Vanilla and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,287 recipes. Both carry 4-methoxybenzaldehyde, which smells sweet, anise. The science ↓

Dessert Apple Rings

Ingredients

Directions

Prepare the batter and apples

  1. Whisk egg until frothy, then whisk in water and vanilla.

  2. Whisk in flour and salt, then let batter sit while slicing apples.

  3. Slice peeled apples into 1/2‑inch thick slices; using biscuit cutters, cut rings from the slices, discarding the smallest circle containing the core.

Fry and finish

  1. Heat oil to 375°F; if it gets too hot, lower the heat to prevent burning.

  2. Dip apple rings into batter, letting excess drip off, then cook in oil in small batches, turning frequently to monitor browning.

  3. When rings turn golden brown, remove to a plate and sprinkle generously with cinnamon sugar while still hot.

  4. Serve immediately with warm drizzled cinnamon cream syrup.

Make the cinnamon cream syrup

  1. In a small saucepan, combine 1 cup sugar, 1/2 cup corn syrup, and 1/2 teaspoon cinnamon.

  2. Bring to a boil, stirring for 3 minutes.

  3. Remove from heat and cool for 5 minutes.

  4. Stir in 1/2 cup evaporated milk.

  5. Serve warm.

What each ingredient does

Egg white
Whipped lightly into the batter to add airy lift and a crisp coating.
All purpose flour
Forms the batter that coats the apples and sets into a crisp golden crust.
Granny smith apples
Firm, tart apple rings that hold their shape and shape the flavor under the coating.
Corn syrup
Adds sweetness and gloss to the cinnamon syrup and keeps it smooth.

The step that matters

Frying the batter-coated rings at the right heat. Oil that is too hot browns the batter before the apple softens, while oil that is too cool lets the batter soak up grease. Holding the oil near 375°F and frying in small batches keeps the temperature steady so the crust turns golden and crisp.
