Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shelley beans
Form the body of the dish, staying tender-firm after parboiling and sautéing.
Garlic
Adds aroma and toasted flavor when gently browned in the oil.
Extra virgin olive oil
Carries the garlic and onion flavor and coats the beans in fat.
Tomato
Adds moisture and mild acidity that brightens the beans.
Lemon juice
Adds acidity that balances the richness of the oil.

The step that matters

Toast the garlic without burning it. Garlic turns bitter and acrid once it darkens too far, and it cooks quickly over high heat. Moving the beans constantly and watching closely keeps it lightly toasted, not scorched.
