  2. If using peppers that are 10,000 Scoville Units or hotter, wear latex/nylon gloves and goggles.

  3. Roast peppers over a gas burner using tongs.

  4. If you want to reduce the burn, remove seeds and membranes from the peppers.

  5. Dice the peppers.

  6. Use the food processor to puree the peppers to the desired size.

Make the sauce

  1. Skin and dice the onion and garlic.

  2. Puree the onion and garlic in a food processor.

  3. Place the onion, garlic, and tomato sauce in a frying pan (do not heat yet).

  4. Mix the peppers with the rest of the ingredients and bring to a boil.

  5. Keep goggles on while boiling.

  6. Add the brown sugar and vinegar and mix all ingredients together.

  7. Pour the sauce from the pan and refrigerate.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Habanero peppers
Provide the main heat and fruity aroma of the sauce.
Tomato sauce
Adds body and moisture, making the sauce smoother and thicker.
Brown sugar
Adds sweetness that balances the sharp heat and acidity.
White vinegar
Adds acidity that brightens the flavor and helps preserve the sauce.

The step that matters

Keep goggles on while boiling. Capsaicin vapor released during boiling can irritate the eyes and airways, so eye protection and good ventilation matter when the peppers are heated.
