Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Short ribs
Provide the main meat, which becomes tender and rich during long braising.
Bacon
Renders fat and savory flavor into the pan for browning the ribs.
Red wine
Adds acidity and depth as it reduces into the braising liquid.
Orange juice
Adds sweetness and acidity that balance the rich, fatty beef.
Chicken stock
Supplies the main cooking liquid that gently tenderizes the meat.
Leeks
Add sweetness and body as they soften into the braising base.

The step that matters

Browning the ribs. Searing the meat before pressure cooking builds deep, roasted flavor through the Maillard reaction. Crowding the pan or skipping the sear leaves the braise tasting flat and gray.

Swap the clove

How well each one fits the dish's main ingredients (olive, pepper, leek, carrot, onion, celery, garlic):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
