Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Country-style Chicken and Vegetables with Rosemary

Oven400°F
Time45 minutes, then 15 minutes longer

Ingredients

Directions

Prepare

  1. Heat oven to 400°F. Coat two roasting pans with cooking spray.

  2. In a bowl, combine garlic, rosemary, parsley, salt, pepper, and oil. In a second bowl, toss mushrooms, potatoes, carrots, and onion with 2 tablespoons of the herb mixture.

  3. Spoon the vegetable mixture into the pans. Brush the remaining herb mixture over the chicken pieces. Place the chicken pieces, skin side up, in the pans, arranging the vegetables around them.

Roast

  1. Bake for 45 minutes. Add 1/3 cup wine to each roasting pan. Baste the chicken with pan juices.

  2. Continue baking for 15 minutes longer or until the chicken is browned and done and the potatoes are tender.

  3. Remove the chicken and vegetables to a serving platter and keep warm.

Make the pan sauce

  1. Place a pan over heat, add 1/2 cup chicken broth. Bring to a simmer, scraping up any bits from the bottom of the pan.

  2. Pour the broth through a strainer into a bowl. Repeat with the remaining roasting pan and chicken broth. Skim off fat.

  3. Pour the pan juices over the chicken and vegetables and serve.

What each ingredient does

Chicken
Provides the main protein; its skin browns and its meat cooks through in the oven.
Potatoes
Starchy vegetable that turns tender and soft, adding body to the dish.
Olive oil
Fat that carries the herbs and garlic and helps the chicken and vegetables brown.
Garlic
Adds pungent aroma that mellows and sweetens as it roasts.
Dry white wine
Adds acidity and flavor to the pan juices when it is added to the roasting pans.
Chicken broth
Adds moisture and savory depth to the pan sauce made from the roasting juices.

The step that matters

Scraping up the pan bits and skimming the fat. The browned bits stuck to the bottom of the pan carry concentrated roasted flavor, so they must be loosened while simmering. Skimming the fat afterward keeps the sauce light and prevents it from tasting greasy.

Swap the clove

How well each one fits the dish's main ingredients (rosemary, parsley, garlic, pepper, olive, mushroom, potato):

  1. Thymefits better
