Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that thickens into the sauce.
Butter
Carries flavor and adds richness to the sauce.
All-purpose flour
Thickens the sauce when cooked with butter and milk.

The step that matters

Reduce heat to low and cook, whisking occasionally, until thickened. Flour thickens only as its starch swells in hot liquid. Cooking gently while whisking keeps the sauce smooth and prevents lumps or scorching on the bottom of the pan.

Swap the onion

  1. Shallotfits better
  2. Parsnipfits better
