What each ingredient does

Salmon
Forms the main protein; grilling sets its flesh and gives it a browned surface.
Honey
Adds sweetness and helps the glaze brown and caramelise on the grill.
Fresh ginger
Adds a sharp, aromatic bite that balances the sweetness of the honey.
Lemon juice
Adds acidity that brightens the flavour of the fish.
Onion
Adds savoury aroma and sweetness as it softens and chars over the fish.
Sweet pepper
Adds mild sweetness and moisture as it cooks alongside the salmon.

The step that matters

Glazing and turning the salmon on the grill. Honey burns easily over direct heat because its sugars caramelise and darken quickly. Brushing the glaze on during grilling, rather than all at once at the start, builds colour without scorching, and turning the pieces helps them cook evenly.

Swap the onion

How well each one fits the dish's main ingredients (salmon, pepper, honey, clove, ginger, lemon):
