What each ingredient does

Chili peppers
Provide the main heat and flavour, and most of the sauce's body once puréed.
Onions
Add sweetness and savoury depth as they soften in the hot oil.
Garlic
Adds pungent aroma that mellows and sweetens when sautéed gently.
Flour
Thickens the sauce as its starch swells when mixed with liquid and heated.

The step that matters

Thicken with flour mixed smoothly in cold water. Flour added directly to hot liquid clumps, because starch grains coat in lumps before they can disperse. Mixing it to a smooth paste with cold water first lets it blend evenly, and the starch then thickens the sauce as it heats.

Swap the clove

How well each one fits the dish's main ingredients (pepper, garlic, onion, olive, flour):

  1. Cuminfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against pepper, garlic, onion, olive, flour. Candidates are from the same food group and used in at least 100 recipes.
