What each ingredient does

Green tomatoes
Provide the main body and tart, acidic flavor of the salad.
Onion
Adds sweetness and savory depth as it softens during cooking.
Carrots
Add natural sweetness and a tender texture when cooked slowly.
Garlic
Contributes pungent aroma that mellows during cooking.
Olive oil
Carries flavor and adds richness to the cooked vegetables.

The step that matters

Cook over low heat with the lid on. Gentle, covered cooking softens the vegetables and draws out their juices without scorching the oil or sugars, keeping the mixture moist and evenly tender.
