  • DRESSING
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1/8 tsp cumin
  • Salt to taste
  • Herbs de Provence, to taste
  • SALAD---
  • 6 oz pkg baby spinach
  • 1/2 cup seasoned almonds
  • 1/4 cup feta cheese
  • 4 boneless chicken breasts, cooked and sliced
  • 2 oranges, peeled and sliced

Directions

Place all dressing ingredients into a bowl. Mix well. Set aside.

Place spinach in a bowl. Mix with almonds and cheese. Place mixed salad on 4 dinner plates. Top with chicken and garnish with orange slices. Drizzle dressing to taste over each salad. MAKES 4 SERVINGS OF MOROCCAN CHICKEN SALAD.*
