What each ingredient does

Skirt steak
Provides the main protein; searing browns its surface while the inside cooks.
Mixed mushrooms
Release moisture and savory flavor that builds the body of the gravy.
Flour
Thickens the pan juices into a smooth gravy as it cooks with the fat.
Beef broth
Forms the liquid base of the gravy and carries the pan flavors.
Dry sherry
Adds acidity and depth that lifts the savory flavor of the gravy.
Butter
Adds richness and a glossy finish to the finished gravy.

The step that matters

Saute the steak 3 minutes per side. Searing in a hot pan browns the surface through the Maillard reaction, adding flavor. Overcooking the thin steak toughens its muscle fibers, so checking doneness matters.
