Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream cheese
Provides the dense, creamy body that sets into the cheesecake structure.
Eggs
Set during baking to give the filling its firm, sliceable structure.
Sour cream
Adds moisture and tang, keeping the filling smooth and rich.
Sugar
Sweetens the filling and crust and helps give a tender texture.
Graham cracker crumbs
Form the crisp, binding base that holds the cheesecake together.
Butter
Binds the crumbs and adds richness to the crust.

The step that matters

Bake until the center is just almost set. Eggs keep setting as the cheesecake cools, so over-baking can make the filling dry, cracked and grainy. Pulling it out while the center still jiggles gives a smooth, creamy texture.
