Pan-fried Pepper Rib Eye Steaks

Ovenbroiler about 4 inches from the heat source

Ingredients

Directions

Prepare the potatoes

  1. Preheat the boiler about 30 minutes before serving, if the manufacturer directs.

  2. Slice the unpeeled potatoes crosswise into ¼-inch slices.

  3. Arrange the potato slices in a single layer on an ungreased jelly roll pan, overlapping slightly if necessary.

  4. Drizzle the potatoes with 2 tablespoons olive or salad oil and sprinkle with ½ teaspoon salt.

  5. Place the pan with potatoes in the broiler about 4 inches from the heat source.

  6. Broil the potatoes for 10 minutes, turning them once.

  7. Sprinkle the potatoes with Parmesan cheese.

  8. Broil for 3 to 4 minutes longer until the cheese melts and the potatoes brown.

Cook the onion and steaks

  1. While the potatoes are broiling, dice the onion.

  2. In a 12-inch skillet over medium heat, add 1 tablespoon hot olive or salad oil and cook the onion until tender, then remove it to a bowl with a slotted spoon.

  3. Sprinkle the steaks with pepper and ½ teaspoon salt.

  4. In the same skillet over medium-high heat, add 1 tablespoon hot olive or salad oil and cook the steaks until browned on both sides, about 8 minutes for rare or until desired doneness.

  5. Place the steaks on a warm platter.

  6. Keep the steaks warm.

Make the sauce and serve

  1. Reduce the heat to medium and spoon off excess fat.

  2. Add the vinegar and cook the onion.

  3. Cook for 1 minute, stirring to loosen brown bits on the bottom of the skillet.

  4. Spoon the onion mixture over the steaks.

  5. Arrange the Parmesan potatoes around the steaks.

  6. To serve, cut each steak in half.

What each ingredient does

Rib eye steaks
Provide the main protein; browning in a hot pan builds flavour on the surface.
Potatoes
Form the side dish; slicing and broiling lets the edges brown and crisp.
Parmesan cheese
Melts and browns under the broiler, adding savoury flavour and a golden crust to the potatoes.
Onion
Cooks down until tender and sweet, then adds savoury flavour to the pan sauce.
Balsamic or red wine vinegar
Adds acidity that brightens the pan sauce and balances the rich beef fat.

The step that matters

Browning the steaks in a hot skillet. A hot, dry surface drives the Maillard reaction, which creates the brown crust and roasted flavour. Overcrowding or a cool pan steams the meat, and cooking past the desired doneness toughens it.
