What each ingredient does
- Blue gelatin
- Sets the dessert into a firm, sliceable structure as it cools.
- Boiling water
- Melts and dissolves the gelatin so it can set evenly.
- Cold milk
- Provides liquid and creaminess for the pudding layer.
- Vanilla instant pudding mix
- Thickens the milk and adds vanilla flavour and body to the dessert.
The step that matters
Dissolve the gelatin completely in boiling water. Undissolved gelatin granules do not hydrate evenly, which can leave gritty spots and weak patches in the set dessert. Stirring for the full time until no granules remain gives a smooth, uniformly firm result.
