Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and, with the boiling, helps the jelly set firm.
Vinegar
Adds acidity that balances the sweetness and supports setting.
Certo
Pectin that gels the liquid into a jelly as it cools.
Hot red peppers
Supply heat and flavour to the jelly.

The step that matters

Boil and stir 5 minutes. The mixture must reach a full rolling boil and be stirred so sugar dissolves and does not scorch on the bottom. Boiling for the stated time helps the pectin and sugar reach the concentration needed to gel properly.
