Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the sauce as it heats, giving it body.
Cocoa
Provides the chocolate flavour and colour of the sauce.
Artificial sweetener
Adds sweetness without sugar, balancing the bitterness of the cocoa.

The step that matters

Whisk cornstarch and cocoa into cold water until smooth. Starch clumps when it meets hot liquid before it can disperse. Whisking into cold water first keeps the particles separate, so the sauce thickens evenly without lumps.

Swap the cocoa

How well each one fits the dish's main ingredients (sugar, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Cocoathe original

Fit is the average pairing score against sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
