What each ingredient does

Chicken
Provides the main protein; browning the skin adds savory flavor and color.
Lime juice
Adds acidity that brightens the flavor and helps season the chicken.
Onions
Soften and sweeten as they cook, adding body to the pan juices.
Tomatoes
Add moisture and acidity that combine with the pan juices into a light sauce.
Garlic
Adds pungent aroma that mellows and deepens as it cooks.

The step that matters

Browning the chicken in a single layer. Crowding the skillet traps steam, so the skin steams rather than browns. Cooking in a single layer over medium heat lets the surface dry and develop color and flavor.
