What each ingredient does

Pearl onions
Caramelize and turn sweet, forming the main body of the sauce.
Butter
Carries heat for browning and adds richness to the onions and mushrooms.
Mushrooms
Release moisture and add savory, meaty depth as they cook down.
Balsamic vinegar
Adds acidity and sweetness that reduce into a glossy, tangy glaze.
Parmesan cheese
Adds salty, savory flavor and a finishing richness to the pasta.
Rigatoni
Sturdy tube pasta whose ridges and hollows catch the chunky sauce.

The step that matters

Browning the onions over high heat before covering. Dry, high heat browns the onion surfaces through the Maillard reaction, building deep flavor. Covering too early would steam them pale and leave the sauce bland.

Swap the clove

How well each one fits the dish's main ingredients (onion, butter, garlic, mushroom, vinegar, sherry, chicken):

  1. Thymefits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Clovethe original
