Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the salad and soak up the warm dressing.
Bacon
Adds savory, smoky flavor and fat for frying the onions and flour.
Red onions
Add sharpness and aroma that mellow as they cook in the bacon fat.
Flour
Thickens the bacon fat so the dressing becomes slightly cohesive.
Sugar
Balances the sharpness of the vinegar and adds mild sweetness.
Vinegar
Adds acidity that gives the dressing its tangy bite.

The step that matters

Cook the flour into the bacon fat until lightly browned. Flour must cook in the fat for a short time to lose its raw taste and to brown slightly. Adding the liquid too early can leave lumps, and skipping the browning leaves the dressing pasty and flat.

Swap the onion

How well each one fits the dish's main ingredients (potato, flour, sugar, pepper, vinegar, parsley):

  1. Shallotfits better
