Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Peppery Bacon, Potato and Green Onion Omelet
Ingredients
Directions
Prepare the filling
Cut bacon into small pieces and fry until crispy, then remove bacon and set aside.
Peel and dice potato into small cubes.
Saute potato slowly in bacon fat.
Add green onions and cook until potatoes are browned and onions are wilted.
Drain excess fat from skillet.
Peel, seed and chop tomatoes.
Melt butter in saucepan.
Cook tomatoes over fairly high heat for 4 minutes until most of the juice has evaporated.
Make the omelet
Spread potatoes and onions evenly around skillet.
Sprinkle bacon over the mixture.
Add cooked tomatoes and chopped parsley.
Beat 6 eggs with water, pepper sauce, salt, and pepper.
Pour eggs over potato mixture.
Cook over low heat until eggs start to set.

Serve
Slide out of pan onto serving plate.
Cut in wedges to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set into a custard that binds the potato, bacon and tomato together.
- Potato
- Gives the omelet body and, when browned, a crisp, savoury texture.
- Bacon
- Adds salty, smoky flavour and fat for frying the potato.
- Tomatoes
- Add moisture and acidity; cooking off the juice keeps the omelet from becoming watery.
- Green onions
- Add mild onion aroma and sweetness as they wilt in the pan.
The step that matters
Cook the eggs over low heat and lift the edges. Eggs are proteins that set gently at low heat; high heat toughens and scorches them before the centre sets. Lifting the edges lets liquid egg flow under the cooked part so the omelet cooks evenly.
