What each ingredient does

Eggs
Set into the structure of the omelet and provide its tender, custardy texture.
Butter
Adds richness and flavor, and browns lightly to give the omelet a nutty aroma.
Hot sausage
Supplies savory, spiced filling that flavors the omelet interior.
Pepper jack cheese
Melts into the filling, adding creaminess and a mild, sharp flavor.

The step that matters

Pushing the eggs while still liquid. Pushing the eggs from the edge toward the middle while they are still runny forms soft curds and lets uncooked egg flow into the gaps. Doing this too late leaves a tough, overcooked omelet.
