Why it works: Sauce and ketchup match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,099 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Meatloaf I
Ingredients
Directions
Prepare the base
Preheat oven to 350°F.
Melt the butter in a saucepan over medium heat.
Add the onion, celery, meat seasoning, and Worcestershire sauce.
Cook, stirring occasionally and scraping the bottom of the pan until the mixture starts sticking excessively, about 6 minutes.
Stir in the milk and ketchup.
Continue cooking for about 1 minute, stirring occasionally.
Remove from the heat and allow to cool at room temperature.
Mix and shape
Place the beef and pork sausage in a large mixing bowl.
Add the eggs, cooked mixture (from saucepan), and bread crumbs.
Mix by hand, being careful not to over‑mix. Overmixing will make the meat mushy. Blend no longer than necessary to distribute the ingredients.
Place the mixture in an ungreased 9×13" baking dish.
Shape into a loaf, making sure not to touch the sides.
Bake
Bake uncovered for 25 minutes.
Raise the heat to 400°F and continue cooking until done, approximately 35 minutes longer.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Hamburger
- Forms the main body of the loaf and provides the meaty texture.
- Pork sausage
- Adds fat and flavor, keeping the loaf moist as it cooks.
- Eggs
- Bind the meat and bread crumbs so the loaf holds its shape when sliced.
- Bread crumbs
- Absorb liquid and fat, helping the loaf stay tender and moist.
- Ketchup
- Adds sweetness and acidity, and helps moisture and browning on the surface.
- Evaporated milk
- Adds moisture and softness to the meat mixture.
The step that matters
Mix gently and only until combined. Overworking ground meat develops its proteins and binds it tightly, producing a dense, rubbery, or mushy loaf instead of a tender one.
Swap the celery
How well each one fits the dish's main ingredients (butter, onion, pepper, meat, sauce, evaporated milk, ketchup):
- Garlicfits about as well
- Celerythe original
- Parsleyfits about as well
- Thymefits about as well
Fit is the average pairing score against butter, onion, pepper, meat, sauce, evaporated milk, ketchup. Candidates are from the same food group and used in at least 100 recipes.
