What each ingredient does

Rice
Starch that absorbs broth and releases starch, giving the risotto its creamy body.
Chicken broth
Cooking liquid that hydrates the rice and supplies savory flavor as it is absorbed.
Parmesan cheese
Adds salty, savory flavor and helps the sauce turn rich and cohesive.
Milk
Adds moisture and dairy richness to the finished, creamy texture.
Mushrooms
Contribute earthy savory flavor and moisture as they cook down.
Olive oil
Fat that carries flavor from the aromatics and helps keep the rice from sticking.

The step that matters

Simmering the rice until tender. Rice must be cooked long enough to soften fully while the liquid is absorbed. Lifting the lid and reducing heat as directed keeps the cooking gentle and even, so the rice does not scorch or turn gummy.
