What each ingredient does

Crescent rolls
Form the dough base and top crust that bakes into a soft, golden layer around the filling.
Ground beef
Provides the meaty body and savory flavor of the filling.
Tomato paste
Adds concentrated tomato flavor, color and thickness to the sauce.
Sloppy joe mix
Supplies seasoning and sweet-savory flavor that defines the filling.
Mozzarella cheese
Melts into a stretchy layer that binds the filling to the dough.
Cheddar cheese
Melts to add sharp flavor and browning on the surface.

The step that matters

Simmer the filling before layering. Simmering lets the sauce thicken and the flavors blend. A watery filling would soak the bottom crescent layer and leave it soggy rather than flaky.
