What each ingredient does

Egg yolks
Thicken the custard and add richness as they cook gently with the cream.
Semisweet chocolate
Melts into the hot custard to give the mousse body, smoothness and a firm set when chilled.
Whipping cream
Provides fat and moisture, giving the custard a silky, rich texture.
Granulated sugar
Sweetens the custard and helps the yolks whisk to a thick, stable base.
Toasted almonds
Add crunch and nutty flavor to the outside of the truffles.

The step that matters

Stir the custard gently over medium low heat. Egg yolks thicken at moderate temperatures but can scramble if overheated, leaving lumps. Gentle heat keeps the custard smooth before the chocolate is added.

Swap the almond
