Ingredients

  • 8 catfish fillets
  • ½ cup all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • ⅓ cup vegetable shortening
  • 2 garlic cloves chopped
  • 28 ounce can whole tomatoes
  • 4 cups fresh spinach
  • 3 tablespoons parmesan cheese grated
  • 8 ounces sour cream
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions

Mix flour, salt, pepper and paprika then dust fish in seasoned flour.

In large heavy skillet sauté fillets in hot shortening until crisp and golden then remove and set aside.

Sauté garlic for 1 minute then add tomatoes and cook until heated through.

With slotted spoon lift out tomatoes (reserve sauce in skillet).

Heat reserved sauce then add spinach and cook just until tender.

Arrange spinach in center of dish then place fillets on top.

Blend 1 tablespoon cheese with remaining ingredients and spoon over fillets.

Sprinkle with remaining cheese and brown under broiler and serve at once.
