What each ingredient does

Pork chops
Provide the main protein that is cooked gently until tender in the braising liquid.
Sour cream
Adds richness and tang, and its dairy proteins can curdle if the sauce boils.
Chicken broth
Supplies the liquid for gentle braising and, once reduced, a savory base for the sauce.
Unsalted butter
Carries the onion and garlic and helps brown the chops with a rich flavor.
White onion
Softens and sweetens as it cooks, adding body to the finished sauce.

The step that matters

Heat the sour cream gently without boiling. Sour cream is an emulsion of milk proteins that can separate, turning grainy or curdled when boiled. Keeping the sauce just hot and stirring it in off a high heat keeps it smooth.

Swap the clove

How well each one fits the dish's main ingredients (onion, garlic, butter, pork, pepper, chicken, cream):

  1. Thymefits better
  2. Parsleyfits better
  3. Celeryfits better

Fit is the average pairing score against onion, garlic, butter, pork, pepper, chicken, cream. Candidates are from the same food group and used in at least 100 recipes.
