What each ingredient does

Eggs
Bind the sour cream mixture and help it set into a sliceable custard as it bakes.
Sour cream
Adds moisture, richness and a tangy flavour to the layers.
Potatoes
Form the bulk and structure of the casserole, soaking up the creamy mixture.
American cheese
Melts into the layers, adding richness and savoury flavour.
Onion
Softened in butter, it adds sweetness and savoury aroma.
Bran cereal
Crushed to fine crumbs, it adds a light, crumbly texture to the layers.

The step that matters

Bake until just set. The eggs in the sour cream mixture set as they heat. Baking only until they firm up keeps the custard creamy; overbaking can make it dry and grainy.
