Directions

Prepare

  1. Preheat oven to 350°F.

  2. Sift the flour before measuring, then resift with soda and salt. Set aside. Without a sifter, measure the flour less and blend it with the baking soda and salt using a hand mixer.

Make the dough

  1. Beat with an electric mixer about 2 minutes, until creamy.

  2. Add eggs and beat until fluffy.

  3. Gradually add the sifted ingredients.

  4. Beat with an electric mixer about 2 minutes, until very well blended.

  5. Stir in the chocolate chips.

  6. Drop by heaping teaspoon fulls onto a lightly greased cookie sheet.

Bake and cool

  1. Bake on the middle rack of the oven for 10 – 12 minutes. Do not over-bake.

  2. Remove from the oven when the cookies are lightly browned and crisp on the bottom; they may seem slightly undercooked.

  3. Cool 1 minute on the baking sheet, then remove to paper towels to cool completely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cookie together as it bakes.
Butter
Adds fat for tenderness and rich flavor, and helps the creamed mixture trap air.
Eggs
Bind the dough and add richness and structure.
Baking soda
Reacts to help the cookies rise, spread and brown.
Brown sugar
Adds moisture and chewiness, plus a deeper caramel flavor.
Granulated sugar
Helps the cookies spread and crisp at the edges, and adds sweetness.

The step that matters

Do not over-bake. Cookies keep firming up on the hot sheet after they leave the oven. Taking them out when the edges are lightly browned and the centers look slightly soft keeps them chewy instead of dry and hard.
