Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole kernel corn
Provides the main bulk and sweet, tender texture of the relish.
Sweet pickle relish
Adds sweetness and tangy pickled flavor throughout the relish.
Distilled white vinegar
Adds acidity that brightens flavor and helps keep the relish tangy.
White corn syrup
Adds sweetness and helps balance the vinegar's sharpness.
Green bell peppers
Contribute crisp texture and fresh, vegetal flavor.

The step that matters

Simmer 5 minutes after boiling. Boiling then simmering softens the vegetables and lets the vinegar and sugars blend into the liquid. Simmering too long can make the corn and peppers mushy, while too short a simmer leaves the flavors sharp and separate.

Swap the onion

How well each one fits the dish's main ingredients (corn, pepper, celery, mustard, vinegar, syrup):

  1. Capsicumfits better
  2. Lettucefits better
  3. Horseradishfits better
