What each ingredient does

Self rising flour
Provides the structure that holds the batter together as it bakes.
Baking soda
Reacts with acidic orange juice to release gas, helping the biscuits rise.
Sweet potatoes
Add moisture, body and natural sweetness to the batter.
Egg
Binds the batter and adds structure as it sets in the oven.
Butter
Adds fat for richness and a tender crumb.
Orange juice
Adds acidity that activates the baking soda and a bright citrus flavour.

The step that matters

Sift the dry ingredients and mix gently. Sifting spreads the leavening evenly through the flour. Mixing only until combined keeps the batter from turning tough, since overworked flour develops gluten.

Swap the orange
