Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main flavor and body of the soup as they soften and release their juices.
Butter
Carries flavor and adds richness while cooking the vegetables gently.
Flour
Thickens the soup as it cooks with the butter and liquids.
Chicken stock or broth
Forms the savory liquid base that the flour thickens.
Half and half
Adds creaminess and a smooth, rich texture.

The step that matters

Adding the liquid to the roux. Adding stock and half and half slowly while whisking off the heat keeps flour from clumping. Whisking distributes the starch evenly so the soup thickens smoothly when it returns to heat.
