Ingredients

Directions

Prepare the filling

  1. Cook beef until crumbly in skillet. Push to one side.

  2. Saute onion in drippings in skillet until soft.

  3. Stir in corn and A-1 steak sauce.

Layer the casserole

  1. Layer half the cheese in greased 12-cup casserole. Then layer half the meat mixture and half the chilies. Repeat layers.

Make the custard and bake

  1. Mix milk, flour, eggs in bowl. Beat until well blended.

  2. Pour over layers in casserole. If you let the casserole chill in the refrigerator 1 hour or more, it will be puffier, but it can go right into the oven.

  3. Bake at 350°F for 1 hour or until casserole is puffed. Serve at once.

What each ingredient does

Eggs
Set the milk and flour custard into a puffed, sliceable structure as they bake.
Flour
Thickens the milk and egg mixture so it bakes into a soft, cohesive custard.
Milk
Forms the liquid base of the custard that bakes around the layers.
Ground beef
Provides the main meaty body and savory flavor of the casserole.
Jack cheese
Melts through the layers to add richness and a creamy, stretchy texture.
Diced green chilies
Add mild heat and a fresh, vegetal flavor throughout the layers.

The step that matters

Pour the custard evenly over the layers. Beating the milk, flour and eggs until well blended keeps the custard smooth, so it sets evenly and bakes into a uniform, puffed casserole rather than lumpy or patchy.

Swap the onion

  1. Capsicumfits better
