What each ingredient does

Eggs
Bind the filling and set when baked, giving the quiche its structure.
Rice
Provides the body of the quiche, holding the filling together in squares.
Lean ground beef
Adds savory meaty flavor and substance to the filling.
Milk
Adds moisture to the egg mixture, keeping the custard tender as it sets.
Jack cheese
Melts into the filling, adding richness and a creamy texture.
Spinach
Adds moisture, color and a mild vegetable flavor to the filling.

The step that matters

Bake until set, not longer. Eggs set as their proteins coagulate with heat. Overbaking squeezes out moisture and makes the quiche dry and rubbery, so check that the centre is just firm.
