What each ingredient does

Zucchini
Softens to a tender texture while browning gives it a golden, savory flavor.
Olive oil
Conducts heat in the skillet and helps the zucchini brown.
Italian bread
Provides a sturdy base that holds the toppings without going soggy quickly.
Beefsteak tomato
Adds juicy moisture and a bright acidity that balances the cheese.
Mozzarella and asiago cheese
Melts over the vegetables, adding richness, fat and savory flavor.
Basil
Adds a fresh, aromatic herb note at the end.

The step that matters

Brown the zucchini in the skillet until golden. Browning needs direct contact with a hot, dry pan surface. Crowding the zucchini or leaving it too long traps moisture, so it steams and turns soft instead of golden.
