What each ingredient does

Chicken thighs
Provide the meat that is wrapped around the stuffing and cooked until tender.
Egg
Binds the stuffing so it holds together inside the thighs.
Soft breadcrumbs
Absorb moisture and give the stuffing body and a softer texture.
Butter, margarine or oil
Carries heat for browning the dredged thighs and adds richness.
Dry white wine
Adds acidity and flavor to the pan liquid that the sauce is built on.
Flour
Coats the thighs for browning and thickens the sauce with the broth.

The step that matters

Brown thighs. Browning the flour-dredged thighs before baking builds color and flavor on the surface and helps the coating set. Searing too cold or too crowded a pan can cause steaming instead of browning, leaving the pale, soft result.
