Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Nectarines
Provide the fruit and juices that soften and flavour the dessert.
Sugar
Draws liquid out of the fruit and sweetens the syrup as it reduces.
White zinfandel wine
Adds acidity and fruity aroma to the marinade and reduces into the syrup.
Pistachio ice cream
Adds cold, creamy contrast to the warm-to-cool fruit and syrup.

The step that matters

Reducing the drained liquid. Cooking the liquid for 15 minutes concentrates its sugars and flavour, thickening it toward a syrup. Stop too early and it stays thin; cook too long and it turns sticky and overly sweet.

Swap the pistachio

How well each one fits the dish's main ingredients (sugar, wine, cream):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits about as well
