Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chuck roast
Becomes tender and rich through long, slow simmering that breaks down its connective tissue.
Cabbage
Softens as it cooks, adding body and mild sweetness to the broth.
Tomato purée and diced tomatoes
Provide acidity and liquid that build the stew's savory, tangy base.
Brown sugar
Adds sweetness that balances the acidity of the tomatoes.
Yogurt
Adds cool, tangy creaminess that contrasts with the hot, rich stew.

The step that matters

Skim the fat from the top of the stew. Fat rendered from the beef rises to the surface and can make the stew greasy; removing it before serving gives a cleaner, lighter broth.

Swap the onion

How well each one fits the dish's main ingredients (pepper, cabbage, tomato, carrot, sugar, yogurt):

  1. Capsicumfits better
  2. Potatofits better
  3. Cucumberfits better
  4. Onionthe original

Fit is the average pairing score against pepper, cabbage, tomato, carrot, sugar, yogurt. Candidates are from the same food group and used in at least 100 recipes.
