What each ingredient does

Mushrooms
Main ingredient that softens and releases moisture, becoming tender and savory as it cooks.
Butter
Adds fat for sautéing and richness, helping the mushrooms brown lightly.
Teriyaki sauce
Adds salty-sweet flavor and color, and its sugars help the mushrooms brown as the liquid reduces.

The step that matters

Simmering until the liquid reduces. Mushrooms release a lot of water. If the pan is crowded or the heat is too low, they steam rather than brown, leaving them soggy and pale. Cooking over enough heat lets the moisture evaporate so the surfaces can caramelize.
