Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef chuck
Slow cooking breaks down connective tissue, leaving the meat tender and moist.
Flour
Coats the meat and thickens the sauce as it cooks.
Tomato sauce
Provides the liquid base and tangy acidity for the goulash.
Sour cream
Adds richness and a creamy texture when stirred in near the end.
Mushrooms
Contribute moisture, earthy flavor and soft texture to the sauce.

The step that matters

Adding the sour cream. Sour cream can curdle or split if it boils for long, so it is added near the end of cooking, after the sauce is hot but off the boil, to keep it smooth.

Swap the garlic

The recipe marks garlic as optional. How well each one fits the dish's main ingredients (beef, flour, onion, pepper, tomato, sauce, mushroom):

  1. Garlicthe original
  2. Thymefits about as well
  3. Cuminfits less well
  4. Celeryfits less well

Fit is the average pairing score against beef, flour, onion, pepper, tomato, sauce, mushroom. Candidates are from the same food group and used in at least 100 recipes.
